



My Favourite Green Juice
Spring is not too far off, with only 5 weeks to go, around now is a time when I usually start to crave lighter foods, hydrating drinks and fresh produce after a winter of comforting soups and slightly heavier warmer foods. Spring is a time of renewal and rejuvenation, making it the perfect season to nourish your body with hydrating and nutrient-rich foods. This is my Favourite Green Juice for spring, an excellent choice for this time of year, packed with hydration and minerals to help you feel your best.
This green juice features celery and cucumber, both high in water content to keep you hydrated. The inclusion of green apples and pears provides a natural sweetness and a boost of vitamins and antioxidants. Fennel and parsley are rich in minerals such as potassium and magnesium, essential for maintaining electrolyte balance. Kale adds a dose of iron and calcium, while mint and ginger offer refreshing flavours and digestive benefits.
By enjoying this green juice, you’ll be giving your body a hydrating, mineral-packed, and nutritious start to the spring season.
NOTE: Sometimes I like to water my juice down 50/50 with filtered water. It makes it go further and is a bit lighter in flavour and sometimes even more refinishing to drink depending on what you’re in the mood for. If you water it down, keep in tight sealing bottles in the fridge and serve chilled asa super refreshing drink for any time of day.
Makes: 2 to 3 servings – or more if watered down with filtered water.
Ingredients:
- 1/2 head of celery
- 1 to 2 telegraph cucumbers (use 2 if they are small, 1 if it’s huge)
- 2 green apples
- 1 pear
- 1 fennel bulb, trimmed
- A handful of parsley
- 4 or 5 mint stalks (leaves and stalks)
- A handful of kale or spinach (cavolo nero, curly, or both)
- A small lump of fresh ginger, peeled (approximately 3 to 4 cm long)
- 1 lemon or 1 lime, peeled
Method:
- Prepare the Ingredients:
- Wash all the fruit and vegetables thoroughly.
- Trim off any roots, dirt, or inedible parts.
- Chop everything so it will fit nicely through your juicer.
- Juicing:
- Place all the prepared fruit, herbs, and vegetables through the juicer.
- Serve:
- Drink the juice right away for the freshest taste.
- If your produce wasn’t chilled, serve the juice over ice to enjoy it cold.
- Optionally, serve with a celery stick to stir and crunch on afterwards for a bit of extra bite.
- If watering the juice down, do so to taste, then keep on bottles in the fridge for up to 2 – 3 days.
